Marinated Winter Salads

“Winter salad” may sound kind of like an oxymoron, especially in cool climates. However, these salads will be full of warming ingredients like roasted root veggies and grounding herbs and spices. Plus, there’s nothing better than a recipe that can be made ahead and enjoyed over the course of several days, especially once that tastes better the longer it sits. Using vegetables and an array of tasty additions, we’ll make several WINTER focused salads that you can enjoy for lunches or dinner side dishes complete with loads of fiber, antioxidants, and gut supportive probiotics. Recipes include:

  • Roasted Vegetables and Chickpeas with a Miso Scallion Sauce

  • Spiced Carrot, Orange & Fennel Salad

  • Pecan Vinaigrette Dressed Kale Salad with Pomegranates
