Meaty, check! Delicious, absolutely! Low calorie, yup! Whether you are vegan, vegetarian, or an omnivore looking to cut cost, animal products, and calories, mushrooms should be on your radar. In addition to being a culinary superstar, mushrooms contain a well studied compound called beta-glucan, which is not found in many other foods. Beta-glucans stimulate our immune system to work better and more efficiently. By including different varieties of mushrooms into our culinary repertoire, we can protect ourselves from colds and the flu! Other new and exciting research shows potential to fight cancer, autoimmune disease, and even cardiovascular disease. We'll be making Oyster Mushroom Poppers with Honey Mustard, Kale and Shiitake Risotto, Enoki Mushroom Fritters with Kimchi, King Oyster Seared "Scallops", and Sauted Maitake Mushrooms with Shallot and Balsamic.
