Part of the Mediterranean diet is allowing yourself to live a "flexitarian" lifestyle where meat and fish are not a daily staple. Other sources of protein such as vegetables, beans, nuts, and seeds can take the place of meat a couple of nights a week. In fact, we are seeing a growing number of families and institutions adopting "Meatless Mondays" as a way to cut cost, environmental burden, and increase health. We'll share a few of our favorite plant based dishes, and we promise that you won't even miss the meat! Recipes include an amazing curried chickpea salad with homemade mayo using chickpeas and olive oil; a fully loaded portobella burrito wrapped in a surprise ingredient; and a completely plant based and gluten free Caesar Salad with a creamy dressing.
