Mushrooms contain a well studied compound called beta-glucan, which is not found in many other foods. Beta-glucans stimulate our immune system to work better and more efficiently. By including different varieties of mushrooms into our culinary repertoire, we can protect ourselves from colds and the flu! Other new and exciting research on mushrooms is showing potential to fight cancer, autoimmune disease, and even cardiovascular disease. Recipes include Oyster Mushroom Poppers, Kale and Shiitake Risotto, Enoki Mushroom Fritters, King Oyster Seared "Scallops", and Sauted Maitake Mushrooms with Shallot and Balsamic.
